6-20-year-old plantations were used as raw material. We have strict principles in viticulture. 8 buds per vine, selection in spring, with a maximum load of 2 kg per vine and a constant presence in the vineyard. Half of the grapes harvested from the Gauer vineyard at full maturity were fermented partly spontaneously, partly with selected yeast. “Punch down” process took place three times a day. Pressing was followed by blending in tanks, where the malolactic fermentation took place, followed by ageing. Barrelled in February with minimal sulphur addition. Aged in 225 and 400 litre barrels for 9 months. It has a very fruity and cool structure.
“Quite a deep, blackish wine with a purple edge. Its fragrance has a stunning varietal character, with textbook blackberries and freshly ground black pepper. A metallic touch of the site. On the palate, an exciting structure: lively acidity, perfectly polished tannins, minimal, proportionate barrel action. The fruit is intense on the palate, with salinity in the second half of the sip. A serious structure, a cool note of place. Not an inaccessible wine, but it is still in the fruity phase.”
