Curiosities from the winegrowers
The must was briefly steeped in mash, followed by settling. Settled and fermentated in steel tanks for 16 days. It was then matured on fine lees to become balanced. We harvested each of the three varieties separately at the appropriate harvest time and then blended them in the variation we liked best. It was bottled after clarification and filtration.
